Italian Culinary Traditions: Where Seppie (Squid) Reign

Squid, known as seppie in Italian, has a long history in Italian cuisine, especially in coastal regions.

In Venice, for instance, squid is cooked with its ink to create the famous dish “seppie in nero”, a traditional recipe that dates back to the Middle Ages. The squid ink, used to flavor risottos and pasta, gives a unique depth of flavor and a characteristic color that makes it instantly recognizable.

Meanwhile, in Tuscany, squid is often served ripieno, stuffed with a flavorful mix of breadcrumbs, garlic, herbs, and sometimes a touch of pecorino cheese. The idea of stuffing squid stems from the Tuscan tradition of making the most of available ingredients, turning something humble into a delicious and hearty meal.

In the southern islands like Sicily, instead, squid is often grilled or stewed with tomatoes and garlic, showcasing the simple, authentic flavors of the Mediterranean.

Every region has its own twist, but they all celebrate squid as a key seafood ingredient in coastal cuisine.

Fun Facts About Squid: Fascinating Creatures of the Sea

Squid is not just delicious, it’s also a lean source of protein, low in calories, and rich in essential nutrients like vitamin B12 and omega-3 fatty acids.

Beyond their culinary use, squid fascinates scientists due to their unique characteristics. These cephalopod mollusks can change color by using special cells called chromatophores, allowing them to blend seamlessly into their surroundings or communicate with other squid.

Squid also have an internal bone, called the cuttlefish bone, which often serves as a calcium supplement for birds. In Mediterranean marine life, squid stands as an iconic symbol, playing a significant role in both Italy’s gastronomic traditions and scientific studies.

Choose salted capers from Pantelleria because they are the best quality.

Opt for Taggiasca Olives for their rich flavor; if you can’t find them, oven-dried black olives make a good substitute.
